Mushroom Thoran /Koon Thoran



Ingredients
1.Mushroom sliced  - 1 cup
2.Grated Coconut - 1 coconut
3.Green chilies  - 4
4.Sliced red onions (chuvannulli)  - 1 cup
5.Turmeric powder - 3/4 tsp


Preparation


1.Cook the mushroom with 1/2 tsp turmeric powder and salt. [This is to remove any poison from the mushroom] Put on the lid and keep on low -medium flame
2.Crush the coconut and mix with sliced small onions,green chilies,curry leaves and salt using hands.


3.Add 3 tsp oil to a hot pan .Splutter mustard seeds and dry red chilies. Add the crushed coconut mixture and saute just to cook the coconut.
4.Add the cooked mushroom to it and saute again for 3 minutes.
5.Switch off the flame and serve warm.

Cherupayar thoran /Moong dal thoran




Ingredients
1.Cherupayar/Moong dal -250 grm
2.Grated coconut -1/2 of a coconut
3.Green chilies-5 
4.Small onions/Kunjulli - 5
5.Turmeric powder -1/4 tsp
6.Cumin powder -1/4 tsp
7.Oil -2 tsp
8.Mustard seeds-as required
9.Curry leaves -as required
10.Salt-as required

Preparation
1. Wash and soak cherupayar/Moong dal  in water for 3 hours
2.Pressure cook the moong dal with enough water and a pinch of turmeric powder and salt until the dal is soft but not mushy
3.Switch off the flame after the first whistle and open the lid 
4.Crush together grated coconut,green chilies,turmeric powder,small onions,cumin seeds and mix with the half cooked moong dal
5.Heat oil in a pan and add mustard seeds,curry leaves and small onions and red chillies
6.Add the cooked moong dal to it and saute well.



Achinga payar/Pacha Payar/ Yard long beans Thoran



Ingredients
Achinga payar/Pacha Payar/ Yard long beans -1 bunch /250 gm
grated coconut -1/2 of a coconut
small onions /kunjulli - 4 nos
Kanthari mulaku -3
Turmeric powder -1/4 tsp
Coconut oil -2 tsp
Mustard seeds ,curry leaves,salt -as required




Preparation
1.Wash  and chop the payar,small onions and green chilies in to small pieces
2.Crush/blend together  grated coconut ,3-4kunjulli, kantharimulaku and turmeric powder
3.Heat 2 tsp coconut oil in a pan ,splutter mustard seeds,add curry leaves and dried chilies
4.Add the above mixture and saute for 1 minute
5.Add the chopped  payar and saute again .
6. Keep it covered and cook on a low-medium flame
7. When its done,open the lid and saute for a couple of minutes or till it is dry and done.

Cheera thoran/Spinach stir - fry


Ingredients

1.Cheera - 3 cups
2.Grated cocunut - 1 cup
3.Kunjulli/Shallots - 1/2 cup
4.Green chilies -4
5.Garlic -1 piece crushed
6.Cumin powder -a pinch
7.Turmeric powder- 1/2 tsp
8.Dry red chilies -3 
9.Salt -as required
10.Curry leaves-as required
11.Oil -3 tsp


Preparation
1.Chop the Cheera /Spinach very well.
2.Crush grated coconut,shallots,green chilies,garlic, turmeric powder and cumin powder
3.Add the above mixture to the chopped cheera and mix well with hands
4.Heat oil in a pan and splutter mustard seeds .Add curry leaves,small onions  and red chilies
5.Add the cheera and stir well .Cover the lid and cook in a low-medium flame.
6.When its done,open the lid and saute for a couple of minutes or till it is dry and done.


Bitter gourd stir-fry /Pavakka Thoran


Ingredients

1.Onion-1
2.Bitter gourd - 2  or 250gm
3.Coconut-  1/2 of one coconut
4.Green chillies-5
5.Shallots/Kunjulli -1/2 cup
6.Coconut oil-3 tsp
7.Mustard seeds-as required
8.Curry leaves-as required
9.Salt-as required 
10.Dry red chilies-4
11.Garlic-1 pod

Preparation

1.Cut the bitter gourd in to small pieces, mix with salt and keep aside
2.Crush together grated coconut,small onions and green chilies
3.Add the above ingredients to the bitter gourd and mix well with hand
4.Heat Oil in a pan,splutter mustard seeds, add red chilies and curry leaves
5.Add the bitter gourd and cook in a low-medium flame. Keep it covered
6.Add 1 piece crushed garlic and enough salt.
7.Open the lid and saute the bitter gourd for few more minutes
8.Serve with rice
